Chicken sloppy joes are a healthier alternative to the classic beef version (Ultimate Sloppy Joes) but all the delicious Greek flavors are a delicious and easy addition like in my favorite Greek recipe, Easy Greek Salad.

With all the delicious Greek flavors you love including olive oil, feta, kalamata olives and a seasoned tomato sauce you’ll love this unique sloppy joes recipe.

Greek recipes get labeled Greek pretty much as soon as feta cheese gets thrown into the mix. While this isn’t a traditional sloppy joe this recipe is sure to be a hit with adults and most kids (make sure your kids like the briny taste of feta and olives before serving this sandwich to them).

If you want to tone down the sandwich so kids would enjoy it more you can swap pitted olives for the kalamata variety as they are less acidic and use half the feta cheese.

MEAL PREP INSTRUCTIONS

When preparing meals to be reheated it is important to cook sauces less than they would normally require. In the case of these sloppy joes you should leave the sauce thinner as it will thicken during refrigeration.

Store the chicken mixture apart from the feta and olive topping to allow you to reheat the filling while leaving the cheese and olives cold.

TIPS FOR MAKING THESE Greek Chicken SLOPPY JOES:

  • Make sure your ingredients are ready ahead of time, don’t let the pan scorch.
  • Stop cooking when its just slightly too wet still, it will thicken as it sits for a couple minutes.
  • Don’t add the feta and olives before hand as the cool briny flavors add a lot to the experience of the dish.
  • If you want to meal prep just leave the sauce extra saucy before shutting off the heat. You may need a bit of water when reheating.

Ingredients

  • 1 pound ground chicken
  • 2 tablespoons olive oil
  • 1/2 red onion chopped
  • 1/2 cup green bell pepper chopped
  • 2 garlic cloves minced
  • 1 cup tomato sauce
  • 1 cup chicken broth
  • 1/4 cup tomato paste
  • 1 teaspoon oregano
  • 1/2 cup feta
  • 1/2 cup kalamata olives

Instructions

  1. Add the chicken, olive oil, onions and green bell pepper to a large skillet on medium high heat breaking it apart but leaving some chunks about the size of a raspberry or small grape (don't crush the heck out of it, the larger crumbles will help give the sandwich stability).

  2. Cook until well browned (5-6 minutes), then add in the garlic, tomato sauce, chicken broth, tomato paste, and oregano and continue cooking until the sauce starts to evaporate and the mixture becomes "sloppy" (about 5-6 minutes).

  3. When the sauce is reduced top with feta and olives and serve inside a toasted brioche bun.

  1. What a fun take on the Sloppy Joe! Love kalamata olives and feta — but adding sliced cucumbers to these sandwiches would be great too.
