We’re all looking for easy dinners, quick shortcuts and ways to replace going out to dinner. Here, we have been been busy testing out new, easy appetizers and dinners. These bacon cheeseburger cups are the perfect family-friendly dinner everyone will love.

The idea for these burger inspired bites came from all the meatball, Sloppy Joes Recipes, and crescent roll recipes I’ve been making lately. I thought, what if I could combine two of my easiest dishes and make it an appetizer? And instead of a crescent dough, I used some canned biscuits. Bacon Cheeseburger Cups were born.

My Bacon Cheeseburger Cups are little fast food snacks that are perfect for dipping in your favorite sauces. They are so easy to make, basically a bacon cheeseburger meatball baked in a buttery biscuit. Make them a little bigger (using a regular size muffin tin) and they make a great kids lunch!

I’ve got some variations down below to turn them into your favorite burgers – they are so versatile and the possibilities are almost endless of how to change them up! Make a few different versions for an easy Super Bowl appetizer that everyone will love! I recommend serving them with a few sauces to give your guests even more flavor options.

Bacon Cheeseburger Biscuit Cups

VARIATIONS ON BACON CHEESEBURGER CUPS

  • Meat: Swap out the ground beef with ground turkey or ground chicken. For a veggie burger, use Beyond Meat ground “beef”, it has the same consistency as meat and is thawed so it’s easy to work with.
  • Bun: Instead of biscuit dough as the “bun”, try puff pastry, crescent roll sheets, Pizza Dough cut into small squares or circles to line your muffin tin.
  • Breakfast: Use ground breakfast sausage instead of ground beef to make these into Breakfast Bites. Instead of tomato juice, try adding maple syrup for a sweet, savory sausage bite.
  • California Burger Cups: Use shredded Monterey Jack cheese and top your Bacon Burger Bites with diced avocado for a Cali classic burger.
  • BBQ Bacon Burger Cups: Roll the hamburger balls in your favorite BBQ sauce before placing in biscuit cups and topping with cheese. Top with canned fried onions after they are done baking.
  • Animal Style Burger Cups: Brush your hamburger balls with a small amount of yellow mustard before baking. Then top Burger Cups with caramelized diced onions, a bit of relish, and big spoonful In and Out Burger Spread.
  • Blue Cheese Mushroom Burger Cups: Top your baked Burger Cups with some sautéed mushrooms and crumbled blue cheese. Bake for a few more minutes until the blue cheese is melty. 

Can these Bacon Cheeseburger Cups be made ahead of time?

Make these Bacon Cheeseburger Cups up to a day ahead of time if storing in the refrigerator. I recommend baking them if you are going to freeze so the dough doesn’t get soggy. You can also form the hamburger balls and freeze those raw. Place on a baking sheet and freeze for an hour before transferring to freezer bag. Thaw partially in the refrigerator overnight before baking or reheating.

HOW TO STORE BACON CHEESEBURGER CUPS

  • Serve: Don’t leave your Bacon Cheeseburger Cups at room temperature for more than 2 hours.
  • Store: Store in an airtight container in the refrigerator for up to 3 days. Line your container with a paper towel to absorb any moisture.
  • Freeze: Allow to cool completely so no moisture collects and freeze in a sealed container for up to 2 months.

Bacon Cheeseburger Cups

Ingredients

  • 1 pound ground beef , (85/15)
  • 1 tablespoon Worchestershire sauce
  • 1/2 teaspoon coarse ground black pepper
  • 1 teaspoon kosher salt
  • 1/3 cup bacon , cooked and crumbled
  • 12 slices American cheese , chopped
  • 2 cans refrigerated biscuits , 6-oz (10 total biscuits)
  • 1/4 cup ketchup

Instructions

  1. Preheat oven to 400 degrees.

  2. Add beef, salt and pepper to a large skillet on high heat and crumble as you cook, 6-8 minutes then stir in the Worchestershire sauce and turn off the heat to let cool for 5 minutes.

  3. Split each biscuit into two layers, making 20 total biscuit rounds.

  4. Spray muffin tin with baking spray then lightly press in the biscuit rounds.

  5. When beef has cooled mix it with the cheese and bacon and spoon it into the muffin tins on the biscuit dough.

  6. Bake for 15-18 minutes, or until biscuits are browned.

  7. Serve with just a bit of ketchup on top of each bite.
