Ingredients

  • 4 tablespoons olive oil , divided
  • 6 chicken legs
  • 1 teaspoon Kosher salt , divided
  • 1/2 teaspoon coarse ground black pepper , divided
  • 8 ounces crimini mushrooms , sliced
  • 1/2 large yellow onion , diced
  • 2 cloves garlic , minced
  • 1 cup chicken broth
  • 2 cups red wine

Instructions

  1. Add 2 tablespoons olive oil to a dutch oven on medium heat.
  2. Season the chicken with half the salt and pepper and sear on both sides, 4-5 minutes on each side.

  3. Remove chicken from the pan, then add in the remaining olive oil.
  4. Add in the mushrooms and onions and sear well until browned, about 6-8 minutes.

  5. Season with remaining salt and pepper, add in garlic and stir.
  6. Add in the chicken broth, stir and cook until reduced by half, about 10 minutes.

  7. Add in the red wine, nestle the chicken back into the pot and cook for 20-25 minutes until sauce is reduced by 75%.
