A Slow Cooker Reuben Sandwich is in fact, perfect for leftovers, but let’s be honest, you are going to want to make a second (and third) corned beef just for this Reuben sandwich. I have a secret  not so secret addiction to slow cooker sandwiches and this Reuben is almost my favorite one.

Truth: my favorite one is this amazing Slow Cooker Philly Cheese Steak Sandwich that is a huge hit on the blog already. Easy Reuben Sandwich Adjustments

The best part about this Slow Cooker Reuben Sandwich is how incredibly easy the recipe is. It is based on the Slow Cooker Corned Beef Dinner I posted last week and takes just a couple of alterations in crafting the Reuben sandwich.

You can also use the recipe for the Crispy Slow Cooker Corned Beef, but just realize there won’t be cabbage in that one so you may want to grab a jar of sauerkraut. If you want to switch things up? How Do you Make a Reuben Sandwich – My tips:

  • We add a bit of apple cider vinegar to the cabbage that was in the slow cooker and a few caraway seeds.
  • Thousand island dressing is an easy authentic and flavorful choice for the dressing. Don’t have any? I have a recipe for it below in the recipe card!
  • Want the corned beef for your Reuben sandwich to be even crispier? Broil it for 30-45 seconds on the top shelf of your oven for deliciously caramelized slices of corned beef. Alternately, you can brown them in a skillet on medium-high heat for a couple of minutes.
  • Butter the hoagie roll lightly before toasting. Trust me on this, it is infinitely better!

Slow Cooker: Love this slow cooker and how programmable it is, it has been a workhorse for me… until…
My New Slow Cooker: This recipe was made in this slow cooker. I browned the chicken in the cast aluminum insert before cooking the chicken on low, so I didn’t have a second pan to clean. For larger roasts, I also brown the meat in the insert and not lose a bunch of the flavor by transferring the meat and leaving the browned bits behind. If you’re thinking of a new slow cooker, consider it if your budget is open.
Sauerkraut: If you want to skip the cabbage or ran out, this is the basic style that works best on the sandwiches.
Thousand Island: My absolute favorite brand, I also LOVE their blue cheese dressing and have eaten it since I was a kid growing up.

Ingredients

Thousand Island Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1/3 cup sweet pickle relish
  • 1 pinch salt
  • 1 pinch black pepper

Quick Sauerkraut:

  • 1 cup cooked cabbage from Slow Cooker Corned Beef Dinner
  • 2 tablespoons apple cider vinegar
  • 1/2 teaspoon caraway seeds crushed
  • 1/4 teaspoon kosher salt

Sandwich Ingredients:

  • 4 hoagie rolls
  • 2 tablespoons unsalted butter
  • 1 pound cooked corned beef from Slow Cooker Corned Beef Dinner
  • 4 slices Swiss cheese

Instructions

Thousand Island Dressing:

  1. Combine all the ingredients and let sit.

Quick Sauerkraut:

  1. Combine all the ingredients and let sit.

Sandwich:

  1. Cut the hoagie rolls in half and butter them.
  2. Toast the hoagie rolls.
  3. If desired broil the corned beef in the oven for 30-45 seconds.

  4. Spread thousand island dressing on both sides of the roll, then layer with corned beef slices, sauerkraut and Swiss cheese.
