If you have been following me on Instagram (which by the way you totally should! It is like looking behind the curtain of the blog) you have undoubtedly seen my posts about working out. I’m admittedly a spin addict and by the end of class I am usually so glad to be done and getting off the bike I want to curl up in a ball and nap next to it. Something that has helped me recover has been getting a snack in the first 45 minutes after I finish my workout.
These energy bites are my heroes! Once I finish spin, I shower and get the kids out of the Kid’s Academy. By the time we get home, it has been almost an hour and a half since working out. I keep a small tub of these in the car so when my oldest proclaims “I’m hungry!!” as we are sitting in traffic I have something to offer. I also keep a small ziploc baggie of them with my workout gear so I am always able to refuel quickly.
You’ll love how incredibly easy these bites are, they require no cooking (so you don’t have to turn on your oven during this hot summer we have been having!) and are bite sized so they are easy to eat for both adults and kids!
Add all the ingredients into a bowl.
Mix until they are fully combined.
Press the mixture down into the bowl. Cover with saran wrap. Refrigerate for a couple of hours at least. Using a 2 tablespoon scoop measure, scoop mixture into balls and roll into a circle.
Peanut Butter & Chocolate No-Bake Granola Energy Bites
Ingredients
- 1/2 cup creamy peanut butter
- 1/2 cup honey
- 1 tsp vanilla extract
- 1 1/2 cup old-fashioned oats
- 1/2 cup raisins
- 1/2 cup ground flaxseed meal
- 1/3 cup mini semisweet chocolate chips
Instructions
- Add all the ingredients into a bowl.
- Mix until they are fully combined.
- Press the mixture down into the bowl.
- Cover with saran wrap.
Refrigerate for a couple of hours at least.
- Using a 2 tbsp scoop measure, scoop mixture into balls and roll into a circle.

Not going to lie. I *may* have stress eaten 6 of these after my spin class this morning. The e-cookbook is looking so cool. Just a few last minute touches before tomorrow!
I’ve never had flax seed, so I was wondering, can I substitute something else for that ingredient?
You could always ground up chai seeds or just leave it out all together if you’d like. I hope you enjoy them!

I eat things like this for breakfast all the time, since I am not big on breakfast in general but these are a light treat that give a good boost!
That is such a good idea! I bet my morning coffee would be better with a couple bites too! On weekdays my breakfast is usually just coffee.
