The caramel ones take about 45 minutes to prepare before baking, these take maaaaaaybe 5 minutes?

Ingredients

  • 1 stick unsalted butter , melted
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 2/3 cups unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 cup dark chocolate chunks

Instructions

  1. Preheat the oven to 350 degrees.

  2. Butter and cocoa powder the bottom and sides of the muffin tin.
  3. In a large bowl add the melted butter and sugar. Whisk well for a minute or so until sugar is dissolved and the butter mixture has cooled.
  4. Add in the vanilla and eggs and whisk until well combined.
  5. Sift together the flour, baking soda, cocoa, and salt and add to the large wet mixture.
  6. Whisk until just combined.
  7. Add in the chocolate chunks
  8. Scoop into muffin tin, 2/3 full.
  9. Bake for 20-22 minutes, don't overbake.

  1. My children absolutely loved these brownies, i have cooked them in a pan as well as muffin tins also mini tins, the minis are great for a quick chocolate fix, the muffins size brownies were a hit at a birthday party.
    i use dark choc bits instead of chunks and once i didn’t have enough so i did a batch with mixed milk and dark choc bits.
